I got a supplement bookwhich is full of 'Recipes with Mango' with 'Aval Vikadan' May edition. Mango thokku/Manga pickle is the first recipe I tried from the book. Mango thokku/Mango Pickle came out very well. It was very tasty with Sambar rice and curd rice. I tried with only one mango. You can add more mangoes and increase the quantity of ingredients accordingly. I am sharing the recipe here.

Sweet Mango Thokku/Manga Thokku/Mango pickle Recipe
Ingredients:
Mango - 1
Red Chilli powder - 2 - 3 tsp
Turmeric powder - 1/2 tsp
Salt - As required
Jaggery powder - 1 small Amla size
To Grind:
Fenugreek seeds - 1/4 tsp
To Temper:
Sesame oil - 2 tbsp
Mustard seeds - 1/2 tsp
Curry leaves - Few
Hing - 1/2 tsp
Red Chilli - 1
Preparation:
1. Wash the mango, peel off the skin and grate it. I have used food blender.
3. Heat the remaining oil in the same pan, fry mustard seeds and Red Chilli.
4. Add grated mango, turmeic powder, powdered Jaggery and salt. Mix it well in low flame.
5. Once the mango is fried well, add fenugreek powder and hing. Give a quick stir and switch off the stove.
6. Keep it an air tight container once the sweet Mango thokku/Mango pickle cools down.
