Udupi Sambar Recipe - Restaurant style Tiffin Sambar for Idli Dosa

Hello friends,

Yesterday I prepared Udupi Sambar for dinner. The Udupi sambar was really delicious to have with Idli. I got the recipe from a magazine and I made little variations to come up with the perfect Udupi Sambar. I added little gingelly/sesame oil with the Sambar while serving and it was so tasty !! Sharing the Udupi Sambar restaurant style recipe with you all.

Udupi Sambar Recipe - Restaurant style Tiffin Sambar for Idli Dosa


Ingredients:


Toor Dal - 50 g
Vegetables of your choice(optional) - I used 2 carrots and 1 potato
Tamarind juice - extracted from a small lemon sized tamarind
Salt - As required
Jaggery powder - 1.5 tsp
Oil - 2 tbsp

To grind:

Fenugreek seeds - 1/2 tsp
Urad dal - 1 tsp
Red Chillies - 4
Corriander powder/Dhaniya powder - 1 tbsp
Curry leaves - few
Coconut grated - 25 g

To Temper:

Mustard seeds - 1/2 tsp
Urad dal - 1/4 tsp
Hing - A pinch
Green chillies - 2 slit

Preparation:


1. Cook the toor dal and vegetables in pressure pan for 5 whistles in high flame and 5 minutes in simmer. I already had the potato cooked during lunch.




2. Heat 1 tbsp oil in a pan and fry the 'To Grind' items one by one. The color of the ingredients should chang before adding the subsequent items. Switch off the stove once everything turn to light brown color and nice aroma starts coming. 






3. Cool the items and grind to a fine paste by adding water little by little.




4. Heat the remaining 1 tbsp oil in the same pan. Add the 'To Temper' items one by one after the mustard seeds splutter. Fry for 2 minutes and add the tamarind juice and salt. Let it boil for 3 minutes.

4. Add the cooked toor dal, vegetables, ground masala and jaggery powder. Add required water to get the Udupi Sambar in expected consistency. Mix well and put it in simmer for 10 to 15 minutes. Switch off the stove.



5. Garnish with curry leaves/coriander leaves as per your choice.

Now, the delicious Udupi Sambar is ready for serving with Idli, Dosa and any other tiffin items. 

Note:

1. Using coconut oil or sesame oil will make the Udupi Sambar more tasty.

2. While having the Udupi Sambar, add sesame oil with the Udupi Sambar. Any Sambar will be more and more tasty when we add little sesame oil while serving.
