Green Chile Stew Recipe is the one which I had recently tried and I was completely doubtful whether this easy green chile recipe would come out tasty before preparing. My hubby does not like very hot dishes even the ones which have capsicum. So, I was quite doubtful while cooking too. But I wanted to utilize the Hatch Green Chiles(Bajji Milagai - in Tamil or and Bhavnagiri Green Chillies) which were sitting inside the refrigerator for more than 5 days. I bought it for making Mirchi Bajji(Milagai Bajji). But I was unable to do it.




I went through several recipes with Green chili but I was not satisfied with the results. I want an easy green chile gravy kind of thing for mooli paratha and sweet corn pulao. So, I stopped searching and started with my own recipe:)

Hatch Green Chile Recipe

I had this green chili stew with sweet corn pulao and mooli paratha(recipe will come soon). It was so yummy seriously. My hubby gave a 5-star rating which was unbelievable for me.

Ingredients - Green Chili Stew | Green Chile Recipe | Hatch green chile recipes | Easy Green Chili recipe:


Green Chile(Small Bajji Milagai) - 6
Cumin seeds - 1 tsp
Curry leaves - few
Tamarind - 2 peanuts size
Coriander powder(Dhaniya powder) - 1 tsp
Turmeric powder - 1/8 tsp
Garam Masala powder - 1 tsp
Jaggery powder - To taste(2 or 3 tsp)
Salt - To taste
Oil - 1 tsp
Water - As required
Coriander Leaves - To garnish


To saute and grind:

Oil - 1 tsp
Big onion - 2 medium size roughly chopped
Tomato - 2 medium size roughly chopped
Cumin seeds - 1 tsp

Cut the hatch green chile horizontally into two and then vertically which yields 4 slices from each green chili. Remove seeds from all green chiles except one. It is you who has to decide how many green chiles you want to keep with seeds. This is purely based on your preference and how hot you want the dish to be.

Add 2 tbsp of oil to tamarind and soak it for sometime and extract the juice from it.

Heat a tsp of oil, add cumin seeds. Let them crackle. Add roughly chopped onion slices and saute till they turn transparent.

Add tomato slices and saute till they turn mushy.

Cool down this mixture and grind it in a mixer to a paste. Add little water if required.

Heat another tsp of oil in the same pan. Add the cumin seeds and curry leaves.

Add the ground onion and tomato paste. Add tamarind extract, salt, turmeric powder, coriander powder, garam masala powder, jaggery powder and mix well. Add little water if required. Allow it to boil for 2 minutes in medium flame.

Add the hatch green chili slices now and boil it for at least 5 minutes in low flame or till it reaches the gravy consistency. Check for salt and adjust if required. Switch off the stove. The taste of the green chillies should be completely absorbed by the gravy. Transfer into serving bowl and garnish with coriander leaves.

Serve hot with roti, pulao, fried rice or parathas.
