Eggless Chocolate Chip Cookies Recipe

I have made these eggless chocolate chip cookies in hide and seek biscuit style. One of my friend asked me to try and send her Hide and Seek Biscuit Recipe long time back. I kept postponing it just because I was not able to buy chocolate chips here. No one can imagine Hide & Seek biscuits without chocolate chips. Recently when I went to a super market called 'Thottam' located near Hindustan University in OMR, I got a pack of chocolate chips luckily. So, the first one I tried with the cute chocolate chips are eggless chocolate chip cookies.

Initially I thought of trying plain round eggless chocolate chip cookies. But after kneading the dough and tasting it, I thought why not to try in a different style of Hide & Seek biscuit recipe. It requires a little bit additional effort but you will enjoy making it as much as I did. I am very sure about it. I do not need to mention about your kids. They will also surely enjoy these egg free cookies.

Eggless Chocolate Chip Cookies

I made this No egg chocolate chip cookies in pressure cooker without oven. You can follow the same measurement of ingredients and bake them in your oven.

Usually I bake both side of the cookies when I make cookies in pressure cooker. This time I wanted to try baking just only one side and wanted to see the results. So I baked few cookies both side and few cookies only one side. Trust me, the cookies cooked in one side were more soft and chewy. The cookies which are baked on both sides are more like biscuits. I like the later while my hubby likes the former. When you decide to cook only one side, you have to keep the flame in low-medium and not more than that so that both the sides get well cooked. If you keep the flame in high only the bottom of the cookies get cooked quickly but the top portion does not get cooked well.

Here is my suggestion for the beginners who make cookies in pressure cooker:

1) Just make plain whole wheat cookies without adding expensive ingredients like nuts and chocolate chips. Once you get hold on cooking cookies in pressure cooker, you can try different variations and they are endless. You can try Nankhatai recipe also.

2) When your cookies are half cooked and started turning brown in one side, take half of the cookies outside and keep it an air tight container once they are cool. Cook rest of the cookies without changing side. Once the cookies are cooked, start cooking the other batch of cookies on the other side. Once the cookies are cooked, check which cookies you like whether cookies cooked in both sides or just one side. You can cook according to your preference in future.

Ingredients - Chocolate chip cookies without eggs - No egg chocolate chip cookies

  • Whole Wheat Flour Or Maida(Plain Flour) - 150 g
  • Powdered Sugar - 100 g
  • Salt - A pinch
  • Baking Soda - 1/4 tsp
  • Vanilla Essence - 1 tsp
  • Cocoa Powder - 1 to 1.5 tbsp(approx)
  • Chocolate Chips - 2 tbsp or as desired + 1/4 tsp
  • Butter - 60 g in room temparature
  • Fresh Curd - 2 tsp(Or Sour curd - 1 tsp+ Milk - 1 tsp)
  • Water or Milk - To knead
  • Olive Oil - To grease the cooking pan and for kneading

Instructions - Chocolate chip cookies without eggs - No egg chocolate chip cookies
  1. Powder the sugar in a mixer. You might need to beat the butter if it is too hard. Take a wide mixing bowl. Take whole wheat flour, powdered sugar, salt, baking soda, vanilla essence, cocoa powder(1 tbsp first), chocolate chips, butter and fresh curd.
  2. Mix everything and make a soft pliable dough using milk. Add cocoa powder while mixing to achieve the desired color. Add the remaining chocolate chips now. Check for sugar half way and adjust. But make sure that you add only powdered sugar. Make sure that you sprinkle milk little by little just to make the cookie dough.  If the dough is very sticky, add little more flour. If the dough is too hard, use more milk. For longer shelf life, use water instead of milk. Grease your palm with little olive oil and grease the dough evenly. It makes us to work with the dough later.
  3. Flatten the cookie dough using a rolling pin like how we make chapathi. Do not flatten or press too much. Press gently and make a thin circle(not too thin though). You can refer the pictures in the next section to understand the thickness.
  4. Cut out the edges and make a neat square. Now cut the dough vertically into 2 inch slices as shown in picture in the next section. I made 2*2 inches square cookies.
  5. Next cut horizontally and make a 2*2 inch square cookies.
  6. Use the back of knife(the blender side) to draw a line diagonally. Do not apply pressure. We are not going to cut the cookie dough into two. We are just going to draw a line.
  7. Then draw lines on both sides of the diagonal line as shown in the pictures in next section, 2 lines on each side.
  8. If you feel the chocolate chips are not much visible from outside, you can now manually place them. Cut the chocolate chips into 4-6 pieces.
  9. Gently press the chocolate chip bits into the cookies. Now eggless chococlate chip cookies are ready to bake. You can bake them in oven if you want. If you are going to bake them in pressure cooker, proceed to step 10.
  10. Preheat the pressure cooker for 5 minutes in medium flame with cooker lid on and without gasket and without whistle. I have used Prestige Deep popular pan to make more cookies at a time. Meanwhile, grease the cooking pan or plate with olive oil. You can see the cooking pan which I used in 12th step in the next section. Place the cookies on the plate. Leave at least 1/2 inch gap between the chocolate chip cookies.
  11. Place the perforated plate or cooker plate on the cooker as per the instructions in your cooker manual.
  12. Place the cooking pan with cookies on top of the perforated plate.
  13. Close the cooking pan with a thick steel lid in appropriate size. I did not use pressure cooker lid as it might get spoiled. Keep the flame in low-medium flame(slightly more than simmer) for 10 minutes. Keep checking frequently till the bottom of the cookies started turning slight brown in color. Once the bottom of the cookies start turning to brown color, it will take approximately 5-7 minutes to get the cookies completely baked.
  14. It takes 15 minutes totally for me approximately to get chewy cookies. If you want crispy cookies, you should allow them to cook few more minutes. You can carefully touch the top of the cookies to check whether they are completely cooked. They should be firm but soft. You can take one cookie outside to check whether they are completely cooked. You should check all the cookies now and then. Some cookies might get cooked faster if the pan is getting heated unevenly due to the shape of cooking pan. Remove the cookies from the cooking plate immediately and allow them to cool preferably in a wire rack before storing in an air tight container.
Eggless Chocolate Cookies are ready to serve. Keep the egg free cookies in an airtight container for longer shelf life.

Notes:

1. Use maida(plain flour) for better taste and to get real taste of hide and seek biscuits. But when you want to make healthy cookies for your kids, choose whole wheat flour only.
2. The quantity of sugar can be adjusted according to your preference.
3. You cannot compare the taste of the cookies baked in pressure cooker with the cookies baked in oven. There will be a slight taste difference always.
4. Do not overcook the cookies as they turn hard to bite.
5. Do not leave the cookies unattended after they start turning brown in color. They might get burnt very quickly.
6. Do not expect to bake perfect cookies in pressure cooker in your first attempt. It takes few times to bake perfect cookies. So, do not use expensive ingredients in your first few attempts until you get a clear picture.
