Beetroot Modak Recipe - Beetroot Sweet Kolukattai version With Jaggery without sugar:

All of us like to indulge in a sweet once in a while right? Then, what about kids? Won't they deserve to indulge in sweets as we did during our childhood? But what is stopping us? We think that sweets are not good for our kids. When we eat sweets, we never care about our health. But when we give sweets to kids, we always have at least a little bit guilty feeling. Jaggery comes to save us from this guilty feeling. But the point here is to pick a good quality jaggery. You might think why we have to be careful while buying a jaggery. I recently heard that Sulphur and other chemicals are added to jaggery.

I am adding this to my series of Healthy snacks recipes for kids as it is a very good and healthy evening snacks items for kids. Don't hesitate to make this for breakfast or dinner too. Don't forget that it is a healthy festival recipe that you can make for Ganesh Chathurthi.


Beetrook Modak - Sweet Kolukattai Recipe


This is not a recipe to pick if you are making snacks in a hurry. It takes time as you have to grate beetroot and coconut. You also need to make jaggery syrup and blend everything. You need to mould the modak too. So, choose it only when you have a minimum of 45 minutes to spend for this sweet if you are making for family of 3-4. If you are going to make only 5-6, you need lesser time.

Beetroot Modak Recipe - Beetroot Sweet Kolukattai version With Jaggery without sugar Learn how to make this sweet kolukattai with jaggery and beetroot. As we are stuffing beetroot, jaggery and coconut into this sweet kolukkatai, it is a very healthy and tasty recipe for kids and adults.

Ingredients
  • Rice Flour - 300 g
  • Water - 350 ml
  • Beetroot Grated - 1/3 cup(1 cup is 200 ml)
  • Jaggery - 1/3 cup powdered
  • Water for jaggery syrup - 1/3 cup
  • Coconut grated - 1/4 cup
  • Elachi powder - 1/4 tsp
  • Ghee - 2 tbsp
  • Salt - 2 pinches
  • Oil - to grease idli pots
 
Instructions
  1. Powder jaggery. Add 1/3 cup water to it and heat in a pan. Break the lumps and continue stirring till the jaggery dissolves completely. Keep the flame in low once the water starts boiling. You do not need to check for any consistency. Just make sure that the jaggery is dissovled in water.
  2. Filter the jaggery syrup to remove dust.
  3. Heat a pan, add 2 tbsp ghee. Wait till it melts.
  4. Add grated beetroot and stir fry for 2 minutes in low flame.
  5. Add coconut and mix well. Stir fry for 2 more minutes in low flame.
  6. Add jaggery syrup, elachi powder, a pinch of salt(optional) and mix well. Keep stirring till everything gets mixed well and the mixture is not watery. Switch off the stove. Our beetroot modak stuff is ready. Keep it aside.
  7. Add a pinch of salt to rice flour and mix it well. 
  8. Boil 350 ml of water in a pan. Wait till the water boils vigorously with bubbles.
  9. Switch off the stove. Add this boiling water to the rice flour and keep mixing with a spoon till you can handle the flour with your hands. Add water little by little. You might not need to add the whole water. Make sure you add little by little.
  10. Once you can handle the flour with your hands, start kneading with your hands. Bring it to modak flour consistency. Now we are ready to make beetroot modak.
  11. Take a lemon sized ball of flour. The size is entirely your preference. 
  12. Flatten it and keep a teaspoon of beetroot stuffing in the center. Again, the quantity of beetroot stuffing is your preference. Please add only whatever the modak can hold.
  13. Close it and form a ball or in your desired shape. You can use your moulds to make beetroot kolukattai. Make all modaks ready.
  14. Take an idli pot. Grease the plates with sufficient oil.
  15. Place the beetroot sweet kolukattai on the plates and steam them as you do for idlis. It will take a minimum of 7 minutes if you cook in high flame. It is good to cook in medium flame. Mine too around 10 minutes approximately. To check whether the modak is cooked, you can touch the surface. If it is cooked, it will be smooth and cooked and does not feel like uncooked batter.
