Baby corn masala gravy is too yummy and you can't resist you from eating too much. Even my kid liked the gravy very much. Kasuri methi(Dried Fenugreek leaves) makes it too yummy and gives the restaurant style baby corn masala gravy. I had tried this recipe next day itself after having it in a north indian restaurant. Serving suggestion: Serve baby corn masala gravy as a side dish for chapathi/roti/phulka, plain rice or variety rices like briyani, pulao and fried rice.

Points to note: The baby corn should get cooked in correct consistency. It should be neither too mushy nor too hard to bite. You can skip the cashew and coconut paste to make the baby corn gravy lower in fat. Also, you can add less oil than mentioned for elder people.

Ingredients:

  • Baby corn - 12 nos
  • Big onion - 1 roughly chopped
  • Tomato - 1 roughly chopped
  • Cashews - 10 nos
  • Grated coconut - 1 tbsp
  • Milk/Paal adai(Fresh cream)- 1 tbsp
  • Turmeric powder - 1/8 tsp
  • Red Chilli Powder - 1 tsp
  • Ginger Garlic Paste - 1 tsp
  • Garam Masala Powder - 1 tsp
  • Kasuri methi - 1.5 tbsp
  • Salt- As required
  • Cinnamon - 1/2 inch stick
  • Bay leaf - 1
  • Cloves - 2
  • Elachi/Cardamom - 1
  • Oil/Ghee - 1 tbsp + 1 tsp
  • Coriander leaves - to garnish

Instructions:



1. Cut baby corn into 1.5 inch pieces and pressure cook them for 6 whistles with enough water and very little salt. We will add salt for gravy later. Heat 1 tsp of oil/ghee and saute the onions till they turn translucent. Add chopped tomatoes and saute till they turn mushy. Switch off the stove and allow it to cool. Grind cashews and grated coconut with required water and make a coarse paste. Keep it aside.

2. Grind the tomato and onion mixture into a fine paste with little water(if required). Heat 1 tbsp of oil in the pan and add 1 bay leaf, 2 cloves, 1 elachi and 1/2 inch cinnamon stick. Add 1 tsp of ginger garlic paste and saute till the raw smell leaves. Add the onion and tomato paste to the pan and add 25 ml water. Add red chilli powder, garam masala powder, turmeric powder, salt and mix well.

3. Boil the gravy till the powders mix well with the gravy. Add the cashew and coconut paste. milk or fresh cream and mix well. Add the baby corn pieces and kasuri methi now. Mix well and cook till the baby corn is coated with the gravy well. Baby corn masala gravy is ready now and you can switch off the stove. Garnish with coriander leaves before serving.
