Amla Pickle Recipe | Gooseberry Pickle | Nellikai Urugai - How To Make Amla Pickle:


Amla Pickle or Gooseberry Pickle is one of the easy homemade pickle recipe which can be made instantly. I would say amla pickle recipe is all about trial and error method. Adjusting red chilli powder and salt is the main process in making this homemade pickle.

Ingredients:


  • Amla/Gooseberry - 4 nos
  • Red chilli powder - 1.5 to 2 tsp
  • Salt - to taste
  • Turmeric powder - 1/8 tsp
  • Fenugreek seeds - 1 tsp
  • To Temper
  • Oil - 2-3 tbsp
  • Mustard seeds - 3/4 tsp
  • Urad dal - 1/2 tsp
  • Asafoetida - 3 pinches
  • Curry leaves - few

Instructions:

1. Clean the amla pieces and pressure cook them for 3 whistles in high flame and 5 minutes in simmer. Meanwhile, dry roast the fenugreek seeds and powder it in a mixer. Once the pressure is released, open the cooker. Once the amla pieces are cool down, you can see that amla is like flower and amla pieces are like florets. You can easily cut them with your hands. Discard the amla seeds.

2. Take the amla pieces in a mixing bowl. Add red chilli powder, turmeric powder and salt. Add a tsp of oil also. Mix them well and keep it closed for 20 minutes. Allow the amla piece to marinate. After 20 minutes, taste a small piece of marinated amla and check for salt and red chilli powder. Adjust them if required.

3. Heat oil in a pan. Add mustard seeds and let them splutter. Add Urad dal, curry leaves and asafoetida. Once the urad dal turns golden brown color, add the marinated amla pieces. Mix well till the amla pieces are well coated with the oil. Add fenugreek powder at last and stir for a minute. Switch off the stove.

Amla Pickle | Gooseberry Pickle is ready to serve. Serve it with curd rice. Store in a clean and dry glass bottle or air tight container. If you are planning to use it for long time, refrigerate it.

Notes:

1. Use crystal salt for better taste and the pickle will have more shelf life.
2. If the pickle gets dried, you can add gingelly oil/sesame oil. Heating is not required if you add this oil. If you are adding sunflower oil, you need to heat the pickle again.
