I choose semiya payasam as a dessert in case of unexpected arrival of guests. No cutting or sweating. It is very simple to make.



Mistakes to avoid:

1. Do not add more water and make it diluted. You will not get tasty semiya payasam.
2. Do not add a lot of sugar and you cannot eat it. Also, do not add very less sugar unless you are serving for a diabetic person.

Ingredients:


  • Semiya/Vermicelli - 1 cup
  • Sugar - 3/4 cup
  • Boiled Milk - 2 cup
  • Water - 1/2 cup
  • Cardamom(Elachi) - 1 pierced(optional)
  • Cashews - 10 split(minimum)
  • Ghee -2 tsp


Instructions:

1. Heat ghee in a pan. Saute cashews till they turn golden brown color. Transfer the ghee and toasted cashews to another bowl. Dry roast semiya(vermicelli) in the same pan. You can ignore roasting semiya if you are using roasted vermicelli. You can roast even if it is roasted vermicelli to get a nice aroma and flavor.


How to make semiya payasam 

2. Add milk, elachi, water and sugar now. Allow it to boil in low flame till the semiya gets cooked completely. It will become soft. Stir occasionally. Add very little water in case the semiya sticks to the pan. Switch off the stove once the semiya(vermicelli) is cooked. The payasam/kheer tends to get thicker over time. Keep that in mind while cooking. So, do not boil it more. If it gets thickened, add milk.

Garnish with toasted cashews and ghee. You can add raisins or nuts of your choice.
