Have a look at the pressure cooker pizza made for my kid. Not bad, right?

Last week, my kid's school had reopened. I absolutely had no time to make interesting dishes for my kid as I also went to school with him and waited outside as that was his first week in Junior KG. On Friday evening, I felt really relaxed due to the feel of weekend. And I wanted to do something special for my kid for the evening. I have already tried wheat pizza in pressure cooker before with paneer, veggies and cheese topping. It was really nice. So, I made my mind to prepare homemade pizza again in my pressure cooker. Last time I made it with yeast. But this time I made without yeast as yeast was not in stock at my home and I made pressure cooker pizz suddenly without any prior planning.

Pressure cooker pizza

I made a little improvement this time. I rolled the pizza dough to a thin circle. Last time the circle was not very thin and I felt that the center of the pizza dough had been cooked better. So, I reduced the thickness of the pizza this time and it came out perfectly.

Cuisine Indian Category: Main course Yields: 1 Medium size pizza
Prep Time: Cook Time: Total Time:

Ingredients

  • Wheat flour/Atta - 200 g
  • Salt - 1/4 tsp or to taste
  • Sugar - 1/2 tsp
  • Olive oil - 1/4 cup(any other edible oil if you do not have olive oil)
  • Baking powder - 3/4 tsp
  • Cheese - 1 cube or as preferred(I have used Amul cheese cube)
  • Oregano and other herbs - As required
  • Pepper powder - As required(optional, I did not add)
  • Chilli flakes - As required(optional)
  • Big onion - 1 sliced
  • Tomato - 1 sliced
  • Capsicum - 1/2 sliced
  • Tomato ketchup/sauce - As required

Instructions
  1. Mix whole wheat flour, sugar, salt, olive oil and baking powder. You can add oregano and any other herbs if you like the pizza dough with a touch of herbs. Sprinkle water and make a dough like chapathi dough. Keep it covered for 30 minutes. Cut the vegetables and keep it ready.

  2. After 25 minutes, remove the gasket and whistle from the pressure cooker and heat the cooker with the lid closed. I have used Prestige Popular Senior Deep Pan . Heat it for 5 minutes in high flame. This process is called Preheating and you are creating oven like environment in cooker. Do not add water.

  3. Take the dough and roll out into a medium size pizza with a diameter of 8-9 inches approximately. The pizza should be thin but slightly thicker than chapathi. 1/4 inch is appropriate size. If you make it as thick pizza, the inner side of the pizza will not be cooked properly. No dusting is required mostly as we have added enough oil. If your dough is too sticky, get the help of oil or flour for dusting. Prick holes with a fork as shown in the picture for even cooking.

  4. Grease the cooking pan with olive oil and place the pizza dough. I used a plate with appropriate size. Once the preheating of the pressure cooker is done for 5 minutes, place the perforated cooker plate(or anything similar) inside the cooker. Place the pizza base on top of the plate and cover it with a thick steel lid or lid of pressure cooker without gasket and whistle. I used thick steel lid which I got with my aapam pan so that the safety valve or any other part of cooker does not get damaged. Do not cover the entire cooker. You need to cover only the pizza pan if you are not using cooker lid. The sides of the pan should not touch the sides of the cooker. Cook the base for 10 minutes in medium flame. Cook the base for 10 minutes in medium flame. Then take the pizza pan out keeping the cooker flame to low. Flip over the pizza base. Spread tomato ketchup on the base. Use as much as you like. Grate cheese and spread it on top of the ketchup. Arrange the vegetables as desired. Grate some cheese again.

  5. Cook the dough for 10 more minutes in medium flame(time varies depending on several factors like dough thickness, flame level and pan thickness so on). Then lower the flame to low flame if the dough is not cooked well and cook till the dough is cooked well. Check the consistency of the pizza dough frequently after 10 minutes since you have flipped over so that the base of the pizza does not get burned or turn hard. Just insert a knife inside the pizza dough and it should come out clean when the pizza dough is cooked well. You can also cut a very little portion of dough from the edges and taste to check whether the dough is cooked completely. The timing varies based on several factors. So keep checking the pizza dough..  Once you switch off the stove, remove from the flame immediately.
