I wanted to make apple rice for a long time but never made it somehow. Last Monday, I was forced to try it as I was running out of time. When I took a little peep inside my fridge, I grabbed the chopped apple slices and capsicum as soon as I saw them. What else I need to make a wonderful lunch for my kid who comes hungry after his half day school? I quickly started the cooking process. I cleaned and put the rice in pressure cooker and started chopping vegetables in the mean time. Apple rice was ready in less than 20 minutes. It's so easy.
I used seeraga samba variety this time. Basmati rice is not mandatory. You can make this rice with any regular rice you use. But make sure that you stick to Basmati rice when you cook for your guests. Olive oil is another magic ingredient when it comes to cooking for guests.

Ingredients
- Basmati Rice/Regular rice - 100g
- Chopped Apple slices - 100g
- Olive oil(or any Edible oil) - 2 tbsp
- Big onion - 1/2 of medium size(Or Spring onions white part chopped - 2 tbsp)
- Chopped capsicum slices - 2-3 tbsp
- Soya sauce - 1/2 tsp
- Salt - to taste
- Pepper powder - 1/4 tsp or to taste
- Sugar - 1/2 tsp
- Spring onion green part - 1 tbsp(optional)
- Water - 150 ml
- Soak basmati rice for 20 minutes in water. Rinse well and cook in pressure cooker with water for 3 whistles in high flame. Cook according to your manual of your cooker. You should be able to separate the grains and it should not turn mushy. Cook accordingly. Once the rice is cooked, spread it on a plate, separate the grains with a fork or spoon and allow it to cool down. If the cooked rice seems to be so sticky, add a tsp of olive oil so that they do not stick more.
- Heat olive oil in a pan, add chopped onion slices and saute till they turn translucent.
- Add capsicum slices and saute in high flame till they are half cooked.
- Reduce the flame to low and add salt, sugar and soya sauce. Mix well in high flame. Add apple slices and mix everything quickly in high flame. The apple slices should blend with everything well especially with the soya sauce.
- Add cooked rice now and mix everything well gently without breaking rice. Add spring onions green part at this point if you are adding. You can add little bit of tomato sauce too. But I thought not to add it as the rice will be already sweet with the apple slices and sugar. Do this in high flame for a minute. Reduce the flame to low and check the taste. If you want to add more soya sauce, you can add now and mix again. Salt can be adjusted later too. Swtich off the stove once the apple fried rice is cooked.
- Check for salt and adjust if required. Sprinkle pepper powder and mix gently. Apple Fried Rice is ready to serve. Serve with tomato sauce if desired.
