Easy Desserts Recipe - Carrot Kheer

Ingredients:

  • Carrot - 4
  • Milk - 500 ml
  • Sugar - 8 tsp(adjust according to your taste)
  • Ghee - 1 tsp
  • Cardamom powder - 1/2 tsp(optional)
  • Broken Cashews - 10

Instructions:

1. Peel off and cut the carrots into big pieces. Pressure cook them for 3 whistles.

2. Grind the carrots to a smooth paste.

3.  Heat ghee in a pan and fry cashews till they turn to golden brown color.  Keep it aside.

4. Saute boiled carrots in the same pan till the raw smell leaves. Add sugar and milk. Stir well continuously till the Carrot Kheer becomes thick or your required consistency.

5. Add Cardamom powder(optional) and fried cashews with the Carrot Kheer and give a quick stir. Switch off the stove.

6. Serve hot or keep it in refrigerator to serve cold.

My Notes:

1. If you want to make a semi solid pudding, do not grind carrot to a smooth paste. Leave it in semi solid state.

2. Even if you grind the carrots smoothly, there may be small carrot pieces in semi solid state after grinding them. So, filter it if you do not want them in the Carrot Kheer and you want the Carrot Kheer to be more in liquid state.

3. What I did was, I filtered and kept the semi solid carrots separately in a cup and I told  my kid that it is carrot ice cream and he loved it:-)
