Carrot rice is one of my favorite lunchbox recipes now. You do not need to cook additional vegetable and a kulambu for packing lunch. I have already posted another easy lunchbox recipe - vegetable rice.You will get super yummy carrot rice only if you add right amount of carrots. My kid also now loves eating carrot rice. Just cook the rice and grate the carrots. After that, you all set to leave the kitchen in few minutes. Only effort you need to put is, grating the carrots. I would recommend you to use only freshly grated carrots for great taste. You do not need any side dish at all. Fryums are the best accompaniment for it. Would your child not fell in love with carrot rice if he/she sees the lunchbox packed with colorful carrot rice and fryums? They will. Now, let us see how to make the carrot rice.

  • Plain Rice/Basmati Rice - 250g
  • Carrot - 2 large
  • Big Onion - 1 finely chopped
  • Ginger Garlic paste - 1 tsp
  • Red Chilli powder - 1/2 - 1 tsp(according to your taste)
  • Garam Masala Powder - 1/4 tsp
  • Sambar powder - 1/4 tsp(optional)
  • Salt - As required
  • Ghee - 1 tsp(optional, but gives nice aroma and rich taste.)
  • Cashew nuts - 8 - 10(optional, but gives nice aroma and rich taste.)

  • To Temper

  • Mustard seeds - 1 tsp
  • Urad dal - 1/2 tsp
  • Chana dal(kadalai paruppu) - 1 tbsp
  • Peanuts - 1 tbsp(optional)
  • Cumin seeds - 1 tsp
  • Cinnamon - 1/4 inch
  • Cloves - 1
  • Curry leaves - few
  • Oil - 2 tsp

  • To Garnish

  • Coriander leaves - 1 tbsp finely chopped

Gobi 65 is what I made last week for my hubby and kid. I usually make Gobi Manchurian at home. Both my hubby and kid love it very much. No need to mention about me, I am a great fan of Gobi Manchurian. If I manage to get big cauliflower, I usually make Gobi Paratha or use it for making the side dish Gobi Keema for chapathi. This is the first time I made Gobi 65. It came out very well. Frankly speaking, I never ate it before. I just followed a recipe and prepared it. So, I asked my hubby to give feedback. He told me that the taste was same as in restaurants. When we went for a dinner outside, I ordered Gobi 65 just to ensure the taste of this recipe I have given is in restaurant style. To my surprise, yes it is. I would say it is better than the one I had outside. The outside one was very oily and they have added food color too. To Make the batter:
  • Maida/All purpose flour - 6 tsp(or Besan flour)

Kollu rasam is a very healthy accompaniment for rice. This recipe does not require rasam powder. I usually stock rasam powder made by my mom. I make kollu rasam just for its health benefits. It is a very famous Kongu recipe. I have never seen anybody in my native place preparing this rasam. I have seen horse gram for the first time when my friend brought from her native place, Coimbatore. Bookmark this kollu rasam recipe and please try it. It is a very easy rasam recipe too. You can even call it as Horse gram soup.

We usually waste the coarse paste kind of thing settled in the bottom of rasam. But, I had it with idli for dinner with gingelly oil and the taste was so good.

1. Kollu/Horse gram is a hard gram. So, it is good to soak it overnight with enough water. Believe me, I never soak it when I use it either for making any dish or to consume directly. I just cook it in a pressure cooker and use it. It may be because of the kind of kollu I am buying. I am not sure. If you are planning to prepare kollu rasam, it is good to soak it overnight.
