Potato Curry Recipe - How To Make Spicy Potato curry - Aloo Rasedar:
Spicy Potato Curry Recipe

Ingredients:
- Potato - 3 large size
- Dried Kasuri methi - 1 tsp crushed(optional)
- Salt - As required
- Coriander leaves - 1 tbsp
Spice Powders
- Coriander powder - 1 tsp
- Red Chilli powder - 1 tsp
- Garam masala powder - 1/2 tsp
- Turmeric powder - 1/4 tsp
- Jeera powder - 1/4 tsp(optional)
- Fennel seeds powder - 1/2 tsp(optional)
To Temper
- Oil - 1 tbsp
- Mustard seeds - 1 tsp
- Urad dal - 1/2 tsp
- Cumin seeds - 1 tsp
- Fenugreek seeds - 1/4 tsp
- Curry leaves - Few
- Hing - 1 pinch
- Red chillies - 1 or 2 broken(I added only 1 large)
Instructions:
1. Boil potatoes well and peel off the skin.
2. Mash one potato and keep it aside. Crumble the other 2 potatoes with your fingers. Do not mash them.
3. Heat oil in a pan, add mustard seeds. Once it splutter add urad dal, cumin seeds, fenugreek seeds, curry leaves, red chillies and hing. Saute for few seconds till the urad dal turns to golden brown color.
4. Add all the spice powders, crushed kasuri methi and salt. Mix well.
5. Add the mashed and crumbled potatoes and mix well. Add little water to allow the potatoes blend with spices. Do not add more water. Adjust salt and other spices as required. Allow it boil in simmer till nice aroma comes and the potatoes blend with the spices well.
Serve hot with chapathi, poori or even rice.

Notes:
1. If you want the potato curry to be more watery, add salt and spices too accordingly.
2. Kasuri methi leaves gives nice flavor and aroma. Try not to skip it.
