Sweet Corn Tomato Rice Bath is a simple, tasty and healthy variety rice recipe. I love sweet corn very much. My kid also loves it. But he will not be able to eat more than half. One fine evening, I finished up my corn. When there is half a corn left over by my sweet kid, I was thinking about trying new recipe for the dinner with it. I did not have idli dosa batter also on that day. So, I planned to do rice with sweet corn. That is how I tried sweet corn tomato bath recipe. Some people might not like to have plain tomato rice. Even those people will love this sweet corn tomato bhath rice. It is a perfect lunch box recipe too.

Sweet Corn Recipes - Sweet Corn Tomato Rice Bath Recipe - Tamil Variety Rice Recipes

Ingredients:
- Cooked Rice - 200g
- Boiled Sweet corn kernels - 75-100 g
- Big Onion - 1 medium size finely chopped
- Tomato - 1 large finely chopped
- Green Chilli - 2 small slit
- Garlic - 5 small crushed
- Turmeric powder - 1/8 tsp
- Kashmiri Chilli powder/Red Chilli powder - 3/4 - 1 tsp
- Garam Masala Powder - 1/4 - 1/2 tsp
- Salt - As required
- Coriander leaves - 1 tbsp(optional)
To Temper
- Mustard seeds - 3/4 tsp
- Urad dal- 1/4 tsp
- Cumin seeds - 1 tsp
- Chana Dal/Kadalai paruppu - 1 tsp
- Hing- A pinch
- Curry leaves- few
- Oil - 2 tsp
Instructions:
1. Heat oil in a pan, add mustard seeds. Let it splutter. Add the rest of items listed under 'To Temper' and saute for a minute.
2. Add chopped onions, garlic and green chillies. Saute well till the onions turns translucent.
3. Add tomato, turmeric powder, red chilli powder, salt and garam masala powder. Saute well till the raw smell of tomato goes off and it turns mushy.
4. Add boiled sweet corn kernels and fry well for a minute.
5. Add cooked rice in the pan and mix well gently till the tomato corn mixture blends with the rice nicely. Switch off the stove.
6. Cover the pan and let it sit for at least 5 minutes.
7. Garnish with coriander leaves and serve hot.
Tasty and healthy sweet corn tomato rice is ready to serve. Your kids will love it for sure. Adjust the spice level according to your kids preference.
