Vegetable Rice Recipe - How To Make Vegetable Rice Easy, Simple, Healthy Rice Recipes

Ingredients:

  • Plain Rice/Basmati Rice - 250g
  • Vegetables of your choice - 250g(I used carrot,beans,cauliflower and capsicum)
  • Big Onion - 1 finely chopped
  • Coriander leaves or Mint leaves - 2tbsp
  • Ginger Garlic paste - 1 tsp
  • Coriander powder - 1/4 tsp
  • Red Chilli powder - 1/2 tsp
  • Garam Masala Powder - 1/2 tsp
  • Cumin seeds - 1 tsp
  • Salt - As required
  • Water - As required
  • Oil- 1 tbsp
  • Ghee - As required to sprinkle




Instructions:


1. Soak the rice in water for 20 minutes. Meanwhile, you can start chopping vegetables.

2. Wash the rice and drain the water.

3. Add 1 tbsp oil in a pressure cooker. Add cumin seeds/jeera and allow it to crackle. Add chopped onions. and saute till the onions turn translucent. Add ginger garlic paste, chopped vegetables, red chilli powder, dhaniya/coriander powder, garam masala powder and salt. Fry for 3 minutes. Add rice and water. Close the lid and pressure cook for 2 whistles and switch off.

5. Fluff the rice with a fork. Sprinkle ghee once the pressure releases. Serve hot with raita of your choice and fryums. Onion raitha tastes best.

Notes:

1. You are the one who decides the vegetables to use. But make sure that you include carrot and beans to get a tasty vegetable rice.

2. You can add green chilli too.

3. Adjust the spice level according to your taste. The recipe I have given will be good for kids and adults. Of you are not preparing for kids, you can add more red chilli powder and garam masala powder if you wish.
