Amla raita is one of the amla recipes which does not have the bitterness. I have already posted amla rice recipe which also does not have bitterness. I have grated amla and added it to the curd. You can also remove the seeds and grind it in the mixie. But you should not grind it to a fine paste consistency. It should be a coarse paste. This will give you crunchiness and it avoids bitterness at the same time.
No need to mention that amla is a natural coolant. Curd is also a natural coolant. So, amla raita is a perfect coolant recipe for summer. Amla raita is a perfect accompaniment for chapathi. I will not prepare any other side dish if I prepare amla raita. It tastes so good and goes well with roti and phulka too. Veg briyani is another main course with which we can serve amla raita.

Ingredients:
- amla - 1/4 cup + 1/8 cup
- Big onion - 1 finely chopped
- Coconut - 3 tsp
- Green chilli - 1 or 2
- Salt- As required
- Curd - 1 cup beaten
To Temper
- Mustard seeds - 1 tsp
- Urad dal - 1/2 tsp
- Hing - A pinch
- Curry leaves - few
- Oil - 1 tsp
Instructions:
1. Beat the curd and keep aside in a bowl. If the curd is too soar, add little water. Grate amla and add it to the bowl. Discard the seeds. Grind green chillies(I have added 1 large size green chilli) and 3 tsp of grated coconut with little water and make a fine paste. Add it to the bowl and mix well.
2. Heat oil in a pan. Add mustard seeds and allow it to splutter. Add urad dal, hing and curry leaves. Saute till the urad dal turns golden brown color. Add chopped onions and saute till they turn translucent. Switch off the stove and add everything in the pan to the curd. Add required salt. Mix well. Keep it covered for 10 minutes before serving.
