Eggless Apple Pudding Recipe - I wanted to try it for a long time whenever I had plenty of apples at home. I finally tried it 2 weeks before even I tried Eggless Chocolate Pudding Recipe. But I have posted chocolate pudding recipe first as it was christmas time :)

Chopped Apple pieces are for crunchiness. Dates and nuts are added for healthy and tasty topping. You can skip those to make a simple and basic apple pudding. In that case, reduce the quantity of jaggery syrup. Also, 1/2 cup of roughly chopped apple is enough. As I thought plain apple pudding might not impress my family, I have added them :) I have replaced sugar with Jaggery. Jaggery is a natural sweetener and is a rich source of nutrients.



About the recipe:

The process of this recipe involves 3 stages. 

1. Making basic apple pudding.
2. Adding chopped apples to the pudding for crunchiness.
3. Making topping for the pudding

As I said, you can just go ahead with step 1 if you want to keep it very simple. In that case, reduce the quantity of jaggery syrup. Also, 1/2 cup of roughly chopped apple is enough.


About the taste:

This apple pudding is eggless and sugarless. It is crunchy and sweet.

Now let us see how to make easy eggless apple pudding recipe without sugar and egg of course.



Eggless Apple Pudding without Sugar Recipe - Easy Apple Pudding Recipe:

Ingredients:


  • Apple - 1/2 cup roughly chopped to grind
  • Apple - 1/4 cup finely chopped for adding to the pudding
  • Apple - 1/4 cup finely chopped for topping
  • Boiled Milk - 500 ml
  • Corn flour - 1/4 cup
  • Grated or Powdered Jaggery - 1/2 cup or more
  • Water - 2 tbsp or to immerse Jaggery to make Jaggery syrup
  • Chopped Raisins and Nuts - As required for Topping
  • Grated or chopped Dates - 1 tbsp(Adds sweetness but optional)

Instructions:

1. Heat a heavy bottomed pan and add powdered jaggery and water. Do not add more water. Add only to make a thick syrup of jaggery. Once the jaggery is completely dissolved, strain the jaggery syrup and keep it aside.

2. Grind half cup roughly chopped Apple in a mixer and make a fine apple paste. Keep it aside.

3. Take 1/2 cup milk and add corn flour. Mix well to avoid lumps and keep it aside.Boil the remaining milk in a pan. Once the milk starts boiling, add the corn flour mixture and ground apple paste when it starts boiling. Keep the stove in low flame. Stir the milk continuously and the milk will start thickening. You should switch off the stove when it reaches the pudding consistency - The mixture should be little thickened but should be in flowing consistency. Add half quantity of the prepared jaggery syrup immediately to the pudding and mix well.

4. Add 1/4 cup of finely chopped apple to the milk(reserve the remaining 1/4 cup of apple for topping). Pour the pudding mixture into the setting bowl in which you are going to set the pudding. Reserve the remaining half quantity of jaggery syrup for topping. Allow the pudding to cool down and keep it in fridge. Allow it to set for 30 minutes.

5. Mix the remaining jaggery syrup, 1/4 cup finely chopped apples, grated or chopped dates, chopped raisins and nuts as you wish in a bowl and heat if for 2 minutes in simmer. Take the pudding out from refrigerator. Spread the prepared mixture on top of the pudding. Keep the pudding again inside the refrigerator. Average setting time is 2 hours. Setting time differs based on the pudding mixture consistency. You can keep on checking the pudding and you can serve it as soon as it is set.

Notes:

1. Measurement of jaggery is purely based on the sweetness of your jaggery. If you feel sweetness is not enough, you can prepare and add more jaggery syrup.

2. You can use sugar instead of jaggery. You may require 1/3 cup of sugar approximately. Make sure that you add the sugar while boiling the milk and not after you switch off the stove.

3. Topping with jaggery syrup is optional. You can either prepare only half quantity of jaggery syrup or mix all the jaggery syrup with the milk itself.

4. I have added finely chopped apple pieces in the pudding and the topping without grinding. It is to get crunchy pudding. If you do not like and want a smooth pudding, grind all the apple and add it with the pudding. You can reduce the quantity of apple in that case like 1/2 to 3/4  cup apple pieces.

5. Topping is completely optional step.
