Vegetable Kurma/veg kurma is the best unbeatable side dish for Chapathi. I am sharing how to make mixed vegetable kurma in hotel/restaurant style here. It goes great with Poori also. I prefer to prepare mixed Vegetable Kurma as a side dish for Chapathi since it can be prepared with the combination of vegetables of our choice. It is so tasty and yummy. If I serve Chapathi with Vegetable Kurma in a plate to my kid, he will finish off the Kurma alone and not Chapathi :-) I am okay with it since it is very healthy consisting nutritious vegetables. When I ask my mom to prepare it, I call it as Parotta Kurma. Let me share you the recipe of mixed vegetable kurma/korma.

Ingredients:
Onion - 1 Medium size finely chopped
Salt - As required
Corriander Leaves - For Garnishing
Oil -1 tsp
Oil -1 tsp
Curry leaves - Few
Gram Flour - 1 tbsp
Powders:
Garam Masala Powder - 1 tsp
Turmeric Powder - A pinch
Red Chilli Powder - 1 tsp
Dhaniya Powder - 1 tsp
Vegetables:
Carrot - 1
Potato - 1
Tomato - 1
Optional:
Beans - 1
Green Peas - 3 tbsp
Cauliflower - Pieces equal to the size of carrot
To Grind:
Grated Coconut - Handful
Poppy seeds - 1/2 tsp
Cardomom - 1
Cloves - 2
Fried Gram - 2 tsp
Ginger - 1/2 inch
Garlic - 1 clove
Preparation:
1. Cut the vegetables and cook in pressure cooker for 6 whistles in high flame.
2. Grind the items listed under 'To Grind' with little water to make a paste and set aside.
3. Heat oil in a pan, add onion and curry leaves and fry till the onion turns to a golden brown color.
4. Add vegetables, salt and the powders. Mix it well.
5. Add the ground paste, required water. Mix Gram flour with water and add(Optional - for thickening the veg kurma).
6. Cook it for 10 minutes in simmer.
7. Garnish with corriander leaves.
You will find Mixed vegetable kurma as a great side dish for chapathi, poori, parotta and roti.
