Ingredients:

  • Rice Flour - 100g
  • Besan Flour/Gram Flour - 50g
  • Fried Gram/Pottu kadalai - 1 tbsp
  • Garlic - 2 cloves crushed to a fine paste
  • Butter - 2 tsp
  • Sesame seeds - 1/2 tbsp
  • Red Chilli powder - 2 tsp
  • Asafoetida - A pinch
  • Salt - As required
  • Oil - For deep frying

Instructions:

1. Grind Fried gram to a fine powder in a mixie.

2. Take a wide mixing bowl and mix fried gram powder, Gram Flour and Rice flour well. Add sesame seeds, crushed garlic, butter, salt, red chilli powder, asafoetida with the mix.

3. Add water little by little and make a soft dough. It should not be thick like Chapathi/Roti dough. It should be very soft and thin so that it will be easy for pressing.

4. Heat oil in a pan for deep frying.

5. Do this simple test to ensure the correct consistency of the dough. Take a press and ribbon pakoda achu as shown in the picture. Grease the press with little oil. Add a small portion of dough and make a small layer in the oil. If you are able to do it easily, your dough consistency is good.

If the dough is too loose, it will consume more oil and break. So, add rice flourin this case. Add water if it is very hard to press.

6. Take the dough little by little in the press and make round layers starting from edge of the pan and end it towards the center. Make only one layer at a time.

7. Once the bubbles stop, flip the Ribbon Murukku to the other side. Cook again till the bubbles stop. Be careful to take it before the Ribbon Murukku gets burnt.

8. Drain the excess oil, cool and break the pakoda before storing in an airtight container.

Notes:

1. Heat oil well before frying.

2. The dough should be more salty and spicy than your required taste level to get the required end result.

3. Always test the dough consistency with little dough before you fill more dough inside the press.

4. Take few drops of water in your palm before filling the dough inside the press if the dough becomes dried.

5. Make sure all the flours are very fine powder. If not, sieve them once.

6. Be careful while pressing in the oil and hold the press tightly.

Now your crispy and tasty Ribbon Murkku is ready.
